Program includes: Preparing for harvest — How to take an accurate crop estimate — Proper berry sampling — Interpreting Brix via a refractometer — Reacting to weather,when to pick early, how long to wait after, etc — Balancing PH, TA, Brix, & sensory and what high PH means for winemaking — Optimizing Harvest & Fermentation — and more.

There will be a QAP Harvest Panel and an Ask the Winemaker session and Q&A with a panel of experienced winemakers
